Ingredients
1 box (6 ounces) lower sodium macaroni and cheese
3 tablespoons low-fat milk
3 large eggs
1 1/2 cups Italian style panko breadcrumbs, divided
1/2 cup all-purpose flour
1/4 cup grated Parmesan cheese
1 tablespoon finely chopped fresh basil plus additional for garnish (optional)
12 fresh mozzarella ciliegene balls
3/4 cup tomato basil sauce
Directions

1. Prepare macaroni and Cheddar with milk as label directs; stir in eggs, 1/2 cup breadcrumbs and flour. Spread macaroni mixture in wide, shallow dish; refrigerate 30 minutes or until completely cool and firm

 

2. Preheat 3-quart air fryer to 400° for 5 minutes. In wide, shallow dish, stir Parmesan cheese, basil and remaining 1 cup breadcrumbs. With wet hands, form about 3 tablespoons macaroni mixture around each mozzarella ball; roll in breadcrumb mixture to coat, and place on rimmed baking pan. Spray mac and cheese bites with cooking spray. In 2 batches, air fry bites 8 minutes or until golden brown, turning once. Makes 12 bites

 

3. Serve bites with sauce garnished with basil, if desired
